Opera in The Kitchen is not only events but also typical products, in fact, we have been producing Extra Virgin Olive Oil for three generations in Puglia. The oil is obtained from the monocultivar Coratina and some olive trees date back to 1000 years ago.
Cold-pressed olive oil is extracted from fresh olives by mechanical means at a temperature of 81 degrees Fahrenheit, according to the Olive Oil Source; and the cold-pressed virgin olive oil contains high amounts of monounsaturated fatty acids, polyphenols and antioxidants that provide many health benefits.
The type used is Coratina, typical of the Apulian territory and it is widely appreciated among olive oil connoisseurs for its strong.
The characteristics are its intense green color, fruity aroma with spicy notes, almond and artichoke.
“In our family we make our own Extra Virgin olive oil since 3 generations. In Apulia we are strong on Coratina cultivar, rarely you’ll see cultivar specified on the bottle, to make monocultivar requires more work because each cultivar will probably be ready at different moment and so we have to pick them separately, plus everything must be done in one day, picking in the morning and we deliver to be milled at evening, in this way there is no oxidation and acidity created during the waiting time, even just 12 hours can make a big difference.”
