We produce Extra Virgin Olive Oil since three generations

In our family we have been producing EVO Oil for three generations using only olives from our own trees. The EVO oil is produced in 24 hours, the olives are picked early in the morning and taken immediately to the oil mill to preserve their freshness. Acidity is one of the most important parameters for evaluating the quality of an EVO oil. The acidity must not exceed 0.8%.

We have three types of olives: Leccino, Coratina and Frantoio
Centuries-old and monumental the olive trees in Puglia are omnipresent from the Gargano promontory to the Salento peninsula. Puglia produces about 40% of all of Italy’s olive oil, with an estimated 60 million olive trees, including some extraordinarily ancient ones.

Extra Virgin Olive Oil 2027 is ready!

The olive harvest is the first necessary step in the production of oil and can be done mechanically or manually.

The olives arrived at the mill a few hours after harvesting, are washed to remove mud, dust and soil. Then it’s time for the milling. Thanks to a compressing action each olive is crushed to obtain a crude extract, also called oil paste. Our EVO oil is cold pressed, it’s necessary that the temperature during this phase does not exceed 27 degrees (80.6 °F) to preserve the fragrance of the olives.

Intense fruity flavour with a hint of bitterness due to the high concentration of oleuropein, slightly spicy due to the high concentration of polyphenols.
